Maple Glazed Salmon

Now that the great weather has arrived, many of you probably have your BBQs out and have been grilling for a little while.  Here is a great recipe to try sometime this summer.

Here’s what you’re going to need:

  • 1 cedar plank (6×14 inches)
  • 2 skinless salmon filets (11/2 pounds total)
  • lemon grass
  • 5 oz Maple syrup
  • 1 tbsp butter
  • juice from a whole lemon
  • 1 tbsp minced ginger

Cooking Instructions:

Here’s how you make the glaze.  In a small pot, saute lemon grass and ginger.  Then add maple syrup and lemon juice.  Cook over low heat, stirring often, for about 10 minutes or until mixture has been reduced to a thick consistency.  Finally, whisk in the butter and remove from heat.

  • Soak cedar plank in salted water for 2 hours, then drain.
  • Preheat oven to 400 degrees.
  • Season the salmon with salt and pepper.
  • Lay the salmon on the cedar plank and carefully brush the glaze over salmon.
  • Cook for approximately 10 minutes and then re-glaze.  Check the plank occasionally.  If the edges start to catch fire, mist with water.
  • Cook for an additional 10-15 minutes, making sure the glaze has caramelized and the salmon is cooked through.  Remove and re-glaze for the final time.

Directions:

Transfer the salmon and plank to a platter and serve right off the plank with your favourite sides.
