Trish’s Lunch Suggestions

Now that kids from all over the Quinte area are back to school, the challenge of figuring out what to pack for lunches begins for another 10 months! Here are some suggestions to keep everyone happy from those with gourmet taste buds to those who like to keep it simple.
Chicken Salad
Mix cooked, chopped chicken with a little mayo, and add:
- diced apple or celery
- grated carrot
- grated Swiss or Edam cheese
Try this sandwich grilled. Delicious!
Turkey, Avocado and Pesto
Spread your bread with a little pesto, and pile on:
- thinly sliced avocado
- thinly sliced turkey
- sliced tomato
- salt and pepper, to taste
Make any sandwich more exciting by spreading your bread with pesto, sun-dried tomato paste or even a little tapenade, instead of the usual butter or mayonnaise.
Peanut Butter and …
Spread your bread with smooth or crunchy peanut butter, and experiment with the following additions:
- thinly sliced or diced celery, or shredded iceberg lettuce
- raisins or dried cranberries
- cranberry sauce
- shredded carrots
- sunflower seeds
These various sandwich should keep you experimenting with your kids for weeks to come! No more listening to “what’s for lunch?”.
